Can you believe we are already into part three of my four-part grilling series with Canadian Turkey?!
Such a fun trip it has been! We have been exploring the theme of "Cooking Around the World with Canadian Turkey." Different cuts of meat, different grill techniques, and different meal categories (appetizer, main, salad, etc.) It's fun seeing what everyone's favorite cuisines are while using fresh Canadian Turkey as the star of the show 😉
Today's grilled turkey caprese salad was a lot of fun for me! I love caprese. It is probably a top 3 appetizer/salad, and you bet I am entangling my family into my food loves!
This salad is not only tasty, nutritious, and filling, but sooooo quick and easy to make! Turkey fillets are quite thin, resulting in a fast cook-time. This recipe was complete in about 10 minutes, and prep time was minimal. I always suggest marinading your meat overnight, but with a strong element such as balsamic vinegar, you can easily get away with a small time-frame.
One of the big concerns with Canadian Turkey (and turkey in general) is how people see it only as a special occasion/holiday food. I get it: we have adapted turkey to fit our big holiday celebrations and 99% of the time we think whole birds (and now, more so ground turkey for the health-fanatics.) Turkey is great all-year-round! It easily fills the shoes of chicken, and at a much cheaper cost. Plus, much like chicken, it is soooo versatile! I think the biggest hurtle for many is overcoming that association of turkey as a holiday food only.
This grilling series has convinced my husband! As a self-proclaimed salad-hater, I have been slowly working him over and this grilled turkey caprese salad has no greens in it, making it ideal for your biggest salad-hater 😉 It is also a twist on an Italian favorite; a cuisine that is very popular here in Canada.
I went with direct heat this time around. As I mentioned, turkey fillets are thin, meaning they cook through fast! They are also MUCH bigger than chicken fillets so no worries about these falling through the grill 🙂 Cook time may vary depending on thickness, but mine were done in about 10 minutes. I just LOVE how the grill marks turned out, too! It is a fun, healthy salad that can be celebrated all year using cost-effective veggies. AND, better yet, I feel leftover turkey would be perfect here!!
📖 Recipe
Grilled Turkey Caprese Salad (Gluten-Free)
Quick, easy, and a great way to enjoy turkey all-year-round!
Ingredients
- 1.5 lbs turkey fillets (mine were approximately 0.75 lbs each)
- 1.5 lbs Creamer potatoes or little potatoes, poked with fork repeatedly
- 1.5 lbs tomatoes, halved and cored
- 1 (200 g) container mini bocconcini cheese, drained and pat dry
- Fresh Basil
- Balsamic glaze if desired
Marinade
- 2 tbsp. olive oil, divided
- 3 tbsp. balsamic vinegar, divided
- 2 garlic cloves, minced
- 1 ¼ tsp. dried basil, divided
- ½ tsp. dried thyme, divided
- Salt and pepper
Instructions
- Combine 1 tbsp. olive oil, 2 tbsp. balsamic vinegar, garlic, 1 tsp. dried basil, ¼ tsp. dried thyme, salt, and pepper. Place turkey fillets into a large Ziploc bag or baking dish and cover with marinade. Place into refrigerator for 8 hours or overnight (if you are short on time, this marinade does well in under 1 hour!)
- Microwave potatoes for 5 minutes.
- Combine 1 tbsp. olive oil, 1 tbsp. balsamic vinegar, ¼ tsp. dried basil, ¼ tsp. dried thyme, salt, and pepper. Place tomatoes into a Ziploc bag or baking dish along with the semi-cooked potatoes and cover with marinade. Place into refrigerator to marinate.
- Preheat BBQ/grill to 450F.
- Place turkey, potatoes, and tomatoes directly onto the grill over the flames. Cover and grill for 4-5 minutes, flip the turkey, tomatoes, and potatoes. Cook for another 4-5 minutes, or until turkey reaches an internal temperature of 165F, tomatoes are softened to your liking, and potatoes are crispy! You may have to rotate the potatoes more often than the other two ingredients since they are so small!
- Cover turkey with aluminum foil and allow to rest 10 minutes before slicing into bite-size pieces. Chop tomatoes.
- Toss turkey, potatoes, tomatoes, and cheese together! Garnish with freshly chopped basil leaves and balsamic glaze if desired!
Notes
Cook time may vary depending on how well your grill maintains heat (use a meat thermometer to check internal temperatures.) Turkey fillets are thin so they will cook quickly! If your meat is browning too fast, you can move them over indirect heat to finish 🙂
