This cranberry lentil brie bake is totally about family and the holiday. For me, I love finding new ways to use up leftovers. Chances are, you are going to have some extra cranberry sauce hanging around. Use it in this recipe to create a simple and stunning appetizer!
Now, as I said in my cranberry lentil bread recipe, lentils are truly a wonderful pulse. Pulse? What are you talking about, Kacey?!
Pulses are part of the legume family, but are the edible seeds from legumes. Think chickpeas, dried peas, and beans. They are very delicious, low in fat, and packed full of protein! Really ideal in a vegetarian/vegan diet, but also truly beneficial for anyone (looking at you, meat-eaters!) Want to know just how healthy and nutritious lentils are? As I was saying, this cranberry lentil brie bake really made me think of family and the season. The recipe is completely vegetarian, making it ideal for me. But it is also gluten-free, and great for my mother-in-law who suffers from Celiac. To be honest, I think this recipe was the first time she ever had the opportunity to try lentils and I received the thumbs up 🙂
Again, this cranberry lentil brie bake is not only easy to make, but a great introduction to lentils. I find a lot of times people turn their nose up at food because it was not prepared properly. With this recipe there should be no concern! My daughter preferred it over my bacon apple cheese ball, and that says a lot because she LOVES bacon!

Cranberry Lentil Brie Bake
A warm appetizer that utilizes lentils to their fullest potential!
Ingredients
- ¼ cup dry green lentils, rinsed
- 1 cup water
- 300 g creamy brie cheese (I used a triple creme)
- ½ cup homemade cranberry sauce
- Salt
Instructions
- Add lentils and water to a small saucepan over high heat. Cover and simmer for 15-20 minutes, or until lentils are tender but still firm (we don't want mushy lentils in this recipe.) Drain, season with salt, and set aside.
- Preheat oven to 350F. Line baking sheet with parchment paper or silicone mat. Place cheese on pan and bake for 10 minutes. Carefully move to serving platter.
- Combine lentils and cranberry sauce. Serve over top of cheese.
Notes
Add as much cranberry sauce as you like (cranberry and brie pair perfectly together!)
Bake the brie while the lentils are cooking to save even more time!
