Since I began my #2meals1recipe project, I find myself more often than not posting two recipes with similar attributes for the week, even if they don't fall under the whole "vegetarian vs meat" thing.
Yesterday's recipe is a homemade honey simple syrup, which coincidentally pairs perfectly with these honey mojitos 🙂
So while I have been slacking on that other project, you can see my mind is still with it 🙂 Over the years it has become second nature to post drinks, ice cream recipes, and BBQ meals during the summer months because that is exactly what we are enjoying!
But come August/September I will be back on track with the #2meals1recipe project 🙂

Mojitos are super simple to make, and these honey mojitos are no different! With spring here, and summer just around the corner, my garden mint has taken off and I don't have to worry about grabbing any from the grocery store ($2.50 for one bunch adds up quickly!)
And while I try really hard to go the homemade route for most of my recipes, sometimes it just doesn't happen. I'll leave the beekeeping to Nude Bee Honey Co. and focus on ways to use up their delicious raw flavors! Blueberry, goldenrod, buckwheat, their flavors are unique and tasty! I know many substitute honey in place of granulated sugar and such, and I highly recommend these flavors. However, you don't want to mask their features. Think simple, local, and raw 🙂

Homemade Honey Mojitos (Honey Simple Syrup)
A spin on the classic drink, these homemade honey mojitos use honey simple syrup, rewarding you with the true taste of raw honey!
Ingredients
- 1 cup homemade honey simple syrup
- 1 cup white rum (omit for alcohol-free recipe)
- 1 bunch (30 grams) mint leaves, removed from stems
- 2 limes, sliced into wedges
- 3 cups club soda
Instructions
- Add limes and mint to a large pitcher. Using a muddler, crush limes until all juices have been released.
- Pour in simple syrup, club soda, and rum. Mix until combined.
- Serve over ice in tall glasses! Drizzle with additional honey if desired.
Notes
You can make these mojitos in advance, but don't go much past a day with all the limes/mint inside the pitcher (becomes quite bitter.)
