I am all about homemade pizza!
It is something we have a lot here. While we don't have a specific day (pizza Friday, anyone?!) we do enjoy it whenever possible, creating new flavor combinations along the way.
Today's thin crust bacon potato pizza is quite different from anything we have ever done before.
First off, no sauce! Well, no tomato sauce that is. A basic mixture of olive oil, garlic, and fresh rosemary is all we used here! It's perfect because when you roast potatoes, this mixture pairs extremely well with them! Which brings us to point number two: potatoes on pizza!
To make things easier and faster, I used The Little Potato Company's Oven/BBQ Ready Packages. However, the Microwave Ready Packages would work just as well, and they are faster!! Truth be told, I totally thought I grabbed the Microwave-Ready box but turns out, I was wrong. That's what happens when you are rushing through the grocery store before your daughter's gymnastics class!
No big deal, either works, and if you are grilling the pizza, the Oven/BBQ package would be more appropriate.
As for the rest when it comes to this thin crust bacon potato pizza, it is all about cheese and fresh herbs! Pre-cooked bacon works perfectly here, but it doesn't take long to cook up some fresh bacon. I imagine this as a great cottage meal where you are looking to use up your leftovers from breakfast 🙂
For my thin crust bacon potato pizza, I used my homemade pizza dough recipe. I only used half the dough produced from the recipe since I wanted a thin crust. This kind of pizza definitely calls for thin crust, so be aware when looking for store-bought dough 🙂

Thin Crust Bacon Potato Pizza
Whether you use homemade or store-bought pizza dough, this recipe will surely wow all your guests!
Ingredients
- 1 store-bought pizza dough ORhomemade pizza dough (you will only need half of my recipe)
- 1 package Little Potato Company Oven/BBQ Ready OR Microwave Ready Package (though any varietal will work here. Approx. 1 lb)
- 4 tbsp. olive oil, divided
- 3 garlic cloves, minced
- 1 tbsp. fresh rosemary leaves + more for garnish
- Salt and pepper
- ¼ tsp. cayenne powder
- 6 oz bacon, sliced
- ½ cup ricotta cheese
- 5 oz mozzarella cheese, sliced or grated
- ¼ cup freshly grated Parmesan cheese
Instructions
- Place a large frying pan over medium-high heat. Add bacon and cook until crispy, about 8 minutes. Move onto paper towel and set aside.
- Unbox potatoes. Remove seasoning. Drizzle potatoes with 2 tbsp. olive oil. Season with salt, pepper, and cayenne (though you can use the seasoning package that comes in the box!) Toss until well combined.
- Place into preheated 450F oven/grill for 30 minutes, or microwave for 5 minutes (if using the appropriate package.) Slice some potatoes in half lengthwise if large.
Pizza
- Roll out pizza dough for a thin crust. Place onto pizza pan.
- Combine remaining olive oil, garlic, and fresh rosemary. Brush onto pizza dough.
- Place potatoes onto pizza, followed by bacon, ricotta, mozzarella, and Parmesan cheese!
- Place into 475F oven for 10 minutes, or until crust is browned. Allow to cool slightly, garnish with fresh rosemary, and serve!
Notes
If using little potatoes from the bag, pre-boil them for abotu 10 minutes, or until fork tender and then proceed with the recipe as described!
