I am officially saying summer is here and what better way to beat the heat than with these orange chicken pineapple potato kabobs!

After a long winter and dreary spring, it feels like summer is here!
Okay, I know it is here because when I was out on the deck making these orange chicken pineapple potato kabobs I was roasting! They only took 10-15 minutes to cook on the grill, but that was way longer than I wanted to be outside, haha. This is definitely the recipe to keep your house cool, all the while providing a nutritious meal!
To make things even simpler, I stuck with The Little Potato Company's BBQ/Oven Ready and Microwave Ready packages. They are super handy, containing 1 lb of their Creamer potatoes with a package of your desired seasoning. All you need is some olive oil and these potatoes are cooked in no time! Personally, I totally recommend the Microwave Ready package because it only takes the potatoes 5 minutes to cook, however, if you are like me and accidentally grab the BBQ/Oven Ready, you will still be rewarded (they just take a bit longer to cook!)
Once the potatoes are cooked, your prep work is minimal. I decided I wanted two different marinades when it came to these pineapple potato kabobs. You DO NOT want to marinade the veggies and chicken together because of cross-contamination. Sure, you are cooking them at the same temperature and evenly so, but chicken is not something I fool around with. Plus, you get to play around with flavor-combinations with very little extra work!
If you cannot find The Little Potato Company's Ready-Made packages, any of their other varietals will do! I just recommend pre-cooking them in the microwave for 7-10 minutes, or until fork tender. You want your veggies to cook evenly with the meat, so pre-cooking the potatoes is a must. My Little Potato Company recommendation? Probably Something Blue just because the color contrast would be so nice! There are already lots of red and yellows on those kabobs 🙂
Personally, these orange chicken pineapple potato kabobs are super easy, with the longest work being the skewering part. It definitely takes some time, but if you have an extra pair of hands in the kitchen, work goes a lot faster!
I would say this recipe falls into The Little Potato Company's Little Chefs' program! We were making kabobs at a young age, and with the minimal cutting required, I see this as a great introductory recipe for those who enjoy cooking. Obviously some supervision around the grill is required, but they can always cook these kabobs in the oven (much like my oven baked chicken kabobs and oven baked tofu kabobs!)
If chicken is not your thing, pork would work perfectly here, as well as tofu! Since the meal is already gluten-free and dairy-free you are left with very minor adjustments to make sure all your dinner guests are happy 🙂

Orange Chicken Pineapple Potato Kabobs
These kabobs cook in no time! The most time consuming element is skewering them!
Ingredients
- 1 ¼ lbs boneless, skinless chicken breasts, cubed into 1x1 inch pieces
- 1 lb Little Potato Company's Creamer Potatoes OR BBQ/Microwave Ready Package
- 1 lb fresh pineapple, cubed
- 1 lb assorted bell peppers, cut into 1x1 inch pieces
- Salt and pepper
Chicken Marinade
- 2 tbsp. olive oil
- Salt and pepper
- Pinch of red chili flakes
- 1 tbsp. rice wine vinegar
- ⅓ cup freshly squeezed orange juice
- 1 tbsp. honey
- 3 sprigs fresh rosemary
- 4 garlic cloves, minced
- 1 tsp. freshly minced ginger
- Orange slices
Pineapple/Pepper/Potato Marinade
- 3 sprigs fresh rosemary
- 2 tbsp. olive oil
- ½ jalapeno, seeded and minced
- Black pepper
Instructions
- Prepare microwave-ready package according to instructions (you can choose whether you use the seasoning package, or just use salt and pepper like I did!) OR microwave 1 lb of any Little Potato Company varietal for 8 minutes, or until fork tender.
Chicken
- Place chicken into mixing bowl or plastic bag: season with salt and pepper. Combine remaining marinade ingredients and pour over chicken. Marinade 8-12 hours.
Potatoes/Pineapple/Peppers
- Place cooled potatoes, pineapple, and peppers into a mixing bowl or plastic bag.
- Combine marinade ingredients and pour over-top of produce. Marinade 8-12 hours.
Assembly
- Soak wooden skewers for 1 hour before grill time. Layer chicken, pineapple, potatoes, and peppers onto skewers in any fashion you like. Discard excess marinade.
- Heat grill over medium-high heat (400F) and lightly oil. Place kabobs onto grill. Cook for 10-15 minutes, turning when necessary, or until chicken reaches 160F and is no longer pink inside.
Notes
Little Potato Company's Microwave-Ready packages really speed up the process! I accidentally bought the BBQ/Oven-Ready packages, but they worked out just fine!
How many kabobs you end up with all depends on how you skewer them!

What I love about the Little Potato Company is their versatility and the fact that the recipes are adventurous and not afraid to explore with international cuisine.
