It is rough getting back to work after a nice weekend (even if it was filled with outdoor work!) So it is no surprise that I needed another week to catch up on things!!

Gardening, cleaning out vehicles, yard work, you name it, we did it! In the end, even though I had some mild anxiety about not posting new recipes, I feel MUCH better knowing my chores are out of the way 😉

My husband had been hankering cornbread to no end, and I had just received some bottles of Nude Bee Honey Co.'s Blueberry Honey in the mail (woot!) I have actually only made cornbread with sugar in the past, but with this awesome honey sitting around, I thought it would be nice to change things up!

And what a great change! These buttermilk honey cornbread muffins taste like honey. And that is what we are going for! You never want to mask an important ingredient, and having worked with Nude Bee Honey many times in the past, I once again wanted to highlight the beautiful taste of their honey.

I made this cornbread in muffin form, but a loaf will work just as well. Cornbread muffins always make me think about the times my mom would share the top half of her muffin with me (the best part!) We never grew up serving cornbread with our meals, but I would love to start a new tradition! Then again, these muffins never made it alongside a dinner either 😉 The next time I make chili, I swear I will serve these honey cornbread muffins alongside it!!

Why do I swear by Nude Bee Honey Co.'s raw honey?

Buttermilk Honey Cornbread Muffins

A healthier twist (using honey instead of sugar!) these buttermilk honey cornbread muffins are great alongside chili, or just on their own!

Ingredients

⅔ cup yellow cornmeal
1 ¼ cups all-purpose flour
1 tbsp. baking powder
1 tsp. salt
2 large eggs, room temperature
½ cup Nude Bee Honey's Blueberry Honey
½ cup butter, melted
¾ cup buttermilk OR ¾ cup milk with 1 tsp. vinegar

Instructions

Preheat oven to 375F. Spray muffin tin with cooking spray.
If you are making your own buttermilk, add 1 tsp. vinegar to a measuring cup and fill to ¾ cup line with milk. If using buttermilk from the store, omit this step!
Combine cornmeal, flour, baking powder, and salt into a small mixing bowl.
In a large mixing bowl, whisk the eggs, butter, honey, and milk together.
Combine the dry ingredients with the wet ingredients and mix until just combined.
Fill muffin tins to top with batter. Place into oven and bake for 17-20 minutes, or until toothpick comes out clean.
Serve with extra honey if desired!
