A simple and delicious autumn meal, this sausage and peppers over rice dish will be perfect for back to school!
Having some extra sausage laying around, I thought it would give me the perfect opportunity to revisit my sausage and peppers over rice dish.
This is a favorite of my husband and brother. Easy and gratifying, I turn to this dish when I don't want to spend hours in the kitchen. The added bonus is that it makes a lot, so serve it over rice or pasta and you will please your guests to no end. And probably have some leftovers, too.
Another positive thing about this dish is its customization. Feeling the dish needs more sausage? Add more. Same can be said for the veggies. I don't really measure out ingredients for this recipe; basically I throw whatever I have on hand in. It is fun when you don't put too much thought into it.

Sausage and Peppers over Rice: Revisited
A quick and easy weeknight meal for back to school!
Ingredients
- 2 pounds hot sausage, casings removed and crumbled.
- 1 tbsp. olive oil
- 1 green pepper, chopped into bite-size pieces
- 1 red pepper, chopped into bite-size pieces
- 1 orange pepper, chopped into bite-size pieces
- 1 onion, sliced
- 2 stalks celery, sliced
- 2 cloves garlic, minced
- 1 (28 ounce) can of diced tomatoes
- 1 tbsp. Worcestershire sauce
- ½ tsp. dried oregano
- Salt and pepper to taste
Instructions
- In a large saucepan over medium-high heat, add the oil. When hot, pour in sausage. Cook for 2 minutes and stir in onions, celery, and garlic. Cook for 5 minutes, stirring frequently. Pour in peppers, salt, pepper, and oregano. Cook until sausage is nice and browned (and cooked through.)
- Pour in the tomatoes and Worcestershire and bring to a boil. Reduce heat, cover, and simmer for 10-15 minutes, or until peppers have softened to your liking. At this point, cook up some rice. Serve the sauce over rice and enjoy!

Don't feel obligated to use hot sausage if spice is not your thing. However, I do believe the spice adds something to this dish so if you use mild sausage, perhaps add in a bit of red chili flakes or some cayenne.
I tend to serve this dish over pasta, but Mr. TCW prefers rice, so I have changed it up for him. I prefer making pasta because I hate cleaning out a pot of sticky rice residue! But with our rice cooker, times have changed. If you make rice as often as we do, I highly recommend investing in one. They are not just for rice either! You can also cook delicious quinoa in them.
