I'm going to admit it was pure torture waiting to work with Dairy Farmer of Canada's August #CanadianCheese of the month!
Once my daughter and I did the reveal on Instagram, my mind went blank. Cheddar cheese is SO popular and used every day by many that I kind of became overwhelmed! Do I go simple? Do I think outside the box?
Today's turkey bacon wraps use Cows Creamery's Avonlea Clothbound Cheddar, a Canadian cheese that hails from Prince Edward Island. My mind immediately went to Anne of Green Gables! However, my eyes were immediately drawn to the award list for this rich, firm cheddar. Dating back as far as 2008, Avonlea Clothbound Cheddar has taken home many awards, including World's Best Vintage Cheese and North America's Best Clothbound Cheddar (multiple times!)
And I can see why! The first bite of that sharp cheddar instantly had me fall in love! We are cheddar lovers in this family, with my sister constantly bringing home aged cheddar cheeses from local cheese factories! Avonlea Clothbound Cheddar is probably the best cheddar I have ever tasted and I have tasted MANY! The Holstein milk used to create Cows Creamery cheeses (including Avonlea Clothbound Cheddar) is locally sourced from a nearby farm in PEI and the cheddar itself is aged for 14 months in carefully monitored temperature and humidity conditions.
Like some of the previous Canadian cheeses we have visited, the milk used for Avonlea Clothbound Cheddar is gently heated but not pasteurized. This allows the enzymes in raw milk to thrive and give cheddar its characteristic flavor. Plus, with Prince Edward Island having no point beyond 30 kilometres or so from the ocean, the salt air and iron-rich red soil add to the flavor and quality of the cheddar!
So basically, in the end I did not want to mask the cheese! Keeping it simple, I went with these turkey bacon wraps! Perfect for back-to-school or any day of the year, you can easily play around with toppings. My daughter is a big onion fan, so we could not leave those out! However, she only likes ranch dressing on pizza so for her wraps, I had to leave off the sauce.
I also feel these turkey bacon wraps are great for kids learning to make their own lunches. Parents can pre-cook the meat and have them in containers ready for easy use. Kids can then have a blast putting together their meal all the while learning about where the ingredients come from and why we choose to eat them 🙂 I admit I should get my daughter into the kitchen more and allow HER to do the work!

Ingredients
- 1 lb turkey fillet, cubed into small chunks
- 6 slices turkey bacon, strips cut in half
- Avonlea Clothbound Cheddar Cheese, grated
- 1 small red onion, diced

Cook bacon for 7-12 minutes, or until browned and crispy, making sure to flip. Cook turkey for 10-12 minutes, or until turkey is cooked through and reaches 165F. Shred or slice turkey smaller if desired.
Assembly
- Lay out wraps. Add a bit of ranch dressing to each. Sprinkle with onion, bacon, apple, turkey, and cheese. Fold over and wrap tightly.
- Slice and serve!
Notes
The amount of wraps you end up with all depends on the size of the tortillas and how many ingredients you put in each 🙂 Easily made gluten-free by using corn tortillas!
