Autumn is just around the corner! While I can enjoy soup all-year-round, sometimes you want that comfort meal in the cooler temperatures. Enjoy this slow cooker pea-potato soup that is so easy, even your Little Chef can help you out! #Creamerpotatoes
This is a sponsored post. I was fortunate enough to receive products and/or monetary compensation from The Little Potato Company. Though products were received, all opinions are my own and I would not recommend a product that I did not enjoy.
I was going to post another soup recipe today, but with back-to-school upon us I couldn't help but think of The Little Potato Company's Little Chef Program and how perfect this slow cooker pea-potato soup is for children.
Not only is it easy to make, but it shows children how important it is not to waste, and to use up leftovers.
With Canadian Thanksgiving just around the corner, and American Thanksgiving not long afterwards, you bet we will be seeing some leftover ham!
I personally like to use the ham bone in soups. It adds the perfect saltiness, and allows you to eat up all the extra "good" pieces of ham without feeling like you need to add it into the soup itself. Extra ham is great! But don't panic if you don't have much extra hanging around. Because let's be honest, many kids LOVE ham, like my daughter, and I cannot keep it in stock 😉
Today's slow cooker pea-potato soup uses The Little Potato Company's Blushing Belle varietal. You know I use these creamer potatoes a lot, but I cannot help it! The color is so pretty, they have so many health properties, and they work so well in soup!
And with the focus being on our Little Chefs, you can bet I am all about knowledge and nutrition. With minimal cutting in this recipe, it is a great introductory to knife skills. The creamer potatoes need only be halved, and the carrots are pretty forgiving size-wise as we need to cook the soup on low for MANY hours to soften everything up.
Much like other split pea soups, this one cooks everything until soft. I feel kids are more inclined to like a hearty soup like this because it kind of hides veggies. They may never even guess there are peas in this soup! And kids being kids, they never turn down potatoes, especially #littlepotatoes!
PS: I didn't mention ham in the post title because it definitely can be omitted to make a vegetarian variety. I would up the salt content and maybe stir in ½ cup more peas to add some volume, but it definitely isn't necessary with all those potatoes! Secret time: a rind of Parmesan works just as great and adds that needed salt content that ham usually provides.

- 4 garlic cloves, minced
- 3 fresh bay leaves or 1 dry bay leaf

Notes
Celery and/or leeks add great taste to soup! Feel free to add some in!
