No need to heat up your house this summer! This slow cooker lemon-dill turkey breast is surrounded with The Little Potato Company's Creamer potatoes and yields a fully delicious meal!

Ever since I got my hands on The Little Potato Company's Something Blue varietal, I have found it hard to use their other varietals. I absolutely LOVE them all so don't think it is anything negative. I just LOVE the color of the potato skin! Most people want to remove the skin for whatever reason, but one big bonus besides the beautiful color is how thin the skin is. Meaning you are not biting into tough pieces like you may on larger-sized potatoes. 95% of the time I am reaching for Creamer potatoes for recipes because they are so convenient, require minimal prep, and display themselves beautifully!
So when it came down to a main dish for this month, I knew I wanted something simple, bold, and colorful! Summer is all about bright lights and colors, am I right?!
Turkey is a great lean protein that is healthy and flavorful. Paired with potatoes, you immediately think of Thanksgiving dinner, but I can assure you, this slow cooker lemon-dill turkey breast recipe is just right for summer! Light, a classic pairing of lemon and dill, and the addition of Creamer potatoes, you have a meal that won't heat the house AND it keeps you on the path of healthy eating (because we all kept our New Year's resolutions, right?!)
While I definitely think this slow cooker lemon-dill turkey breast is ideal for summer, I wouldn't bat an eye serving it at any holiday dinner! I feel it is always the same old stuff, especially in regards to ham and potatoes! Pineapple or brown sugar? Check. Mashed potatoes? Check. I like the idea of whole potatoes paired with a roast or other protein 🙂 Plus, way less work with these little guys!
Now, besides being healthy and nutrition-packed, this slow cooker lemon-dill turkey breast is completely gluten-free. With only 20 calories per potato, you bet you can indulge! And I mean, throwing everything into a slow cooker and walking away is always a plus in my books 🙂
Which brings me to the protein. HAVE A SHARP KNIFE ON HAND! Argggg, I am so mad at myself. It was 100% juicy and full of flavor! Beautiful piece of meat cooked perfectly (seriously, my slow cooker has a built-in thermometer so that means no over-cooking,) and then I hack it to bits... This is why the vegetarian in the household should not cut meat! I always butcher it! Thankfully the Something Blue varietal are the star of the show so no one will see my hack job 😉
And lastly, this recipe calls for a half-breast. You can generally find it alongside other cut meats at your grocery store. You don't want those breast rolls that come pre-prepped or in a box. Even at only 2 lbs this turkey breast produced so many portions (which is great, because my husband always takes leftovers for lunch!) Cook time is approximate as every slow cooker is different AND it all depends on the thickness/shape of your meat. Basically keep an eye on it 😉

Slow Cooker Lemon-Dill Turkey Breast (Half Turkey Breast)
Dinner is completed in one pot! These Something Blue potatoes really stand out, making the dish look elegant and gourmet!
Ingredients
- 2 lb boneless, skinless half turkey breast (not those stuffed turkey breast rolls.)
- 1.5 lbs potatoes
- ½ tsp. garlic powder
- ½ tsp. paprika
- Salt and pepper
Sauce
- ¼ cup butter, melted
- 3 tbsp. freshly squeezed lemon juice
- 2 tsp. lemon zest
- 1 tbsp. freshly chopped dill + more for garnish
Instructions
- Place potatoes onto a microwave safe plate and prick them a few times so they don't explode. Microwave for 5 minutes.
- Combine all sauce ingredients and mix until blended.
- Place turkey breast into a 6-quart slow cooker.
- Pour sauce over potatoes and stir until coated. Dump potatoes over turkey, pushing them off to the side to expose the meat.
- Combine garlic powder, paprika, salt, and pepper. Sprinkle over turkey and potatoes.
- Cover and cook on low for 3-4 hours, or until internal temperature reaches 160F.
- Remove turkey, cover, and allow to rest for 10 minutes. Slice and serve with additional dill if desired!
Notes
Microwaving the potatoes first ensures they will be cooked through in the end. Be careful not to overcook your turkey (begin checking around the 3 hour mark) and use a sharp knife to slice it!
