Over the years my blog has changed greatly.
I used to jump onto food trends, fads, and was basically a band-wagoner. It made sense because all the other bloggers were doing it.
But as I have found my own voice, I feel this isn't needed (probably never was!) And I feel this is apparent in my sponsored Little Potato Company posts!
Overnight anything never appeals to me. It just sounds wrong, haha. But then again, I like most of my food hot (unless it is potato salad!) Oatmeal needs to be hot. French toast needs to be hot.
However, overnight doesn't necessarily mean cold. Today's overnight breakfast casserole is soooooo easy and yields a great amount of food with great taste!
And while it is overnight, it isn't sitting there to firm up (or soften) like overnight oats. The premise of this recipe is to save you time in the morning by having all the prep done the night before! It is also a great recipe to use up leftovers in!
Since breakfast is my least favorite meal to make, I am all for this! I love breakfast foods, and this overnight breakfast casserole is up there in my top favorite (though I have to have a vegetarian version for myself!) My problem with breakfast is that it is made so early in the morning (obviously) and usually you have to work in batches because you don't have enough pan space to fry up an egg for everyone all at once (meaning, some people are waiting on their food!)
But with this overnight breakfast casserole, your creations are endless and everyone is eating together at the same time! Include your favorite varietal of #Creamerpotatoes and you have a dish no one can turn down 🙂 I decided to go with The Little Potato Company's Terrific Trio again because the colors are just too hard to pass up! You get a taste of every potato here and the best part is not having to remove the skins! Oh, my, it sounds so petty, but peeling potatoes sucks. It really does. With LPC's Creamer potatoes, no peeling is necessary meaning less prep work and faster meals! I can honestly say I have never peeled one of their potatoes!
Just like everyone is going to have their favorite little potato varietal, everyone is going to have their own topping preferences. I can easily see this meal being made in muffin tins so people can customize their breakfast to their liking. But if you don't have a picky family, this overnight breakfast casserole is for you! Add anything you like and the cook-time shouldn't differ too much (you need at least 50 minutes to 1 hour.) I plan to have this on my table Christmas morning for my family, but without onions of course for my father (ruining it for the rest of us! Just kidding, we all love you but not your hate of onions!)
📖 Recipe
Overnight Breakfast Casserole (Egg & Potato!)
Meal prepping your breakfast the night before is such a life saver! Feel free to customize this dish to your liking (ex. no meat for a vegetarian variety.)
Ingredients
- 12 large eggs
- 1.5 lbs The Little Potato Company's Terrific Trio, quartered
- 1 ½ cups shredded cheddar cheese (I used Gouda)
- ½ cup milk
- 1 tsp. Worcestershire sauce
- 1 red pepper, diced
- 1 onion, diced
- Handful of fresh spinach leaves
- 6 slices cooked bacon, roughly chopped
- 1 cup leftover turkey, roughly chopped
- Salt and pepper
Instructions
- Preheat oven to 450F.
- Toss potatoes with salt, pepper, and 1 tbsp. oil (I used 1 tbsp. bacon fat from my cooked bacon.)
- Place into oven and bake for 20 minutes.
Casserole
- Whisk eggs until paler in color. Stir in milk, Worcestershire sauce, salt, and pepper.
- Lightly grease a 9x13 inch baking dish.
- Add potatoes, then bacon, peppers, onion, spinach, a sprinkling of cheese, and turkey. Pour eggs over-top. Sprinkle with remaining cheese.
- Cover and place into refrigerator overnight.
- Preheat oven to 350F. Uncover dish and bake for 50 minutes to 1 hour, or until casserole is set and no liquid appears when you poke it with a knife.
- Slice and serve!
Notes
You don't have to let the mixture sit overnight, but it does help combine the flavors. Feel free to change up the ingredients to suit your needs 🙂 A fantastic recipe to use up leftovers!
