Originally adapted from my previous cookie crinkle recipes, these double chocolate cookies with Hershey's CHIPITS are the chocolate-lover's dream (without being over the top!)

First off, let me say thank you to Hershey's Canada for providing me with a seemingly endless supply of CHIPITS! I cannot say thank you enough! Seriously, when the package arrived, my daughter and I were so excited to see what flavors were in the box that we actually cut through one of the chocolate chip bags... Not to worry, those milk chocolate chips did not go to waste!

Okay, we would have, but I suggested to kiddo that we make some delicious cookies, and we did exactly that. These double chocolate cookies, made with Hershey's cocoa powder and milk chocolate CHIPITS, were a creation based off my lemon and almond cookie crinkles. I already experimented with Hershey's cocoa powder in my red velvet cookie crinkles, and knew I wanted to make a chocolate version.
The only issue came when I rolled the double chocolate cookies in the confectioners' sugar and cocoa powder mixture. Since the cookie dough was already dark brown, the confectioners' sugar/cocoa powder mixture I rolled the dough into was also quite dark, not making the crinkles in the cookies stand out much. So while a cookie crinkle at heart, I had to go with an alternative and name them double chocolate cookies (because they are exactly that!)
Rich, soft, and chewy, it was hard to determine what chocolate to use in these cookies. I decided to stick with the common milk chocolate, but you could create this cookie in so many different alternatives. Peanut butter, Skor, white chocolate chips. So many possibilities! I am already thinking of making these again and dipping them in melted white chocolate for a cool effect. However, these double chocolate cookies on their own are just right. Not too sweet, and perfectly decadent. I ate so many I actually got an upset stomach... I had to taste test a bunch of batches to make sure they were just right!

Double Chocolate Cookies with Hershey's CHIPITS
Double chocolate cookies for all the chocolate-lovers! But not too sweet 🙂
Ingredients
- ½ cup butter, room temperature
- ¾ cup granulated sugar
- 1 tsp. vanilla
- 1 large egg, room temperature
- ⅛ tsp. salt
- ¼ tsp. baking powder
- ⅛ tsp. baking soda
- 1 ½ cups all-purpose flour
- 2 tbsp. unsweetened cocoa powder, divided
- ½ cup Hershey's Milk Chocolate CHIPITS, melted
- ¼ cup confectioners' sugar
Instructions
- Preheat oven to 350F. Line baking sheet with parchment paper or silicone liner and set aside.
- Add butter and granulated sugar to the bowl of a stand mixer. Cream until light and fluffy (5-7 minutes.)
- Add vanilla extract and egg. Mix until well combined. Pour in the melted chocolate and stir until just combined.
- Sift together flour, baking soda, baking powder, 1 tbsp. cocoa powder, and salt. Add to the mixer ½ cup at a time, mixing until just combined.
- Shake the confectioners' sugar onto a plate and add in the remaining 1 tbsp. cocoa powder.
- Measure out 1 tablespoon-sized portions of dough and place directly into confectioners' sugar/cocoa powder mixture. Roll to form a ball.
- Place onto baking sheet and bake for 10-12 minutes.
- Cool for about 5 minutes on pan and then finish cooling on wire racks.
Notes
The dough may be a bit sticky so I suggest using a cookie scoop to place the dough directly into the confectioners' sugar/cocoa mixture.
