Yay for back-to-school!
Okay, not really! I love having my daughter at home and she is a big help at times! And then other times I have the countdown to the first day of school in my head, lol. Getting her into the kitchen more has been my goal this summer. And while we have done some small projects, it hasn't been as much as I like.
So I decided to have her make a recipe that she could mostly do by herself!
These easy slow cooker breakfast potatoes fit into The Little Potato Company's Little Chef program. If you are not familiar with the program, I encourage you to check it out! We want children to understand the importance of eating right, and what better way to show them than having them cook themselves! Of course, at such a young age (my daughter is going on 6) you will need to help them, but soon enough you will have a Little Chef of your own in the kitchen 🙂
While she is in the kitchen with me quite a bit, she tends to disappear rather fast! I don't think she understands that not everything can be dessert!
The slow cooker is the perfect appliance for keeping them interested! No open flames, all one-pot (for the most part,) and something they can come back to and see how their meal is doing. And better yet, using The Little Potato Company's Boomer Gold varietal means little to no cutting (though my daughter was adamant about halving our potatoes!) Great way to introduce knife work to them (though we definitely have to work on proper handling!)
Of course, with these slow cooker breakfast potatoes I had to help. Our microwave is situated above the stove so it isn't easily accessible. However, for the most part this recipe was done herself (or could have if I wasn't always in a hurry!) She did complain about the melted butter being too hot for her liking.
And let's be honest here, the meal I most hate cooking is breakfast! I'm a morning person, but I don't want to cook right when I get up! So this is a win-win recipe for everyone! PS: My dad hates onions so I added them for flavor and then removed them after cooking! Feel free to eat them 🙂

Easy Slow Cooker Breakfast Potatoes
A quick and simple breakfast recipe that can be cooked overnight (and the potatoes should be okay sitting on the warm setting!)
Ingredients
- 3 lbs Little Potato Company's Boomer Gold Creamer Potatoes, halved
- 1 large onion, halved
- ¼ cup butter, melted (can use oil for vegan recipe!)
- 1 ¼ tsp. paprika
- 1 ¼ tsp. dried oregano
- ¼ tsp. garlic powder
- ⅛ tsp. cayenne powder
- Pinch of nutmeg
- Salt and pepper
Instructions
- Combine all seasonings and mix well.
- Place potatoes and onions into a 6-quart slow cooker. Sprinkle with seasonings and butter. Mix until well combined.
- Cover and cook for 6-8 hours on low heat, 4-6 on high heat (if you go the high heat route, be sure to toss every so often as the ingredients can burn.)
- Sprinkle with fresh oregano if desired and serve!
Notes
This recipe is best with the low and slow method 🙂 For faster completion, you can microwave your potatoes first!

Would this still work if I used a mixture of the red, yellow and blue instead? I like how colorful the trio is bur don’t want to mess up the flavor.
