4 years ago this past December I created my first recipe using The Little Potato Company's Fingerling potatoes! The pan-fried fingerling potatoes with bacon were a huge hit, taking off pretty fast, and becoming one of my most popular recipes to date! I have since updated the photos for that post, but I will share the original photo.
Soooo bad, haha. I have come a long way and I am happy The Little Potato Company saw potential! 4 years later and here I am, still creating delicious Creamer potato recipes! Because let's be honest, they are the best!
These breakfast home fries use Fingerling potatoes, just like my very first recipe! Pretty awesome, eh?!
Fingerling potatoes are really neat in a lot of ways. Their shape, for one, is a hit with both home cooks and renowned chefs. While their non-traditional shape is fun to play with, it's their flavor that really stands tall! Earthy, with a natural nutty finish, this is probably my top 3 Creamer potato!
And bacon pairs so well with Fingerlings!
I actually have two versions of these breakfast home fries. The vegetarian home fries go live tomorrow, and while not much different from these bacon ones, they sure are perfect for vegetarians! Even the meat-eaters in this house enjoyed home fries loaded with mushrooms! It is something I really love about this project: bringing people together with different dietary lifestyles!
And if you feel like it, throw some bacon slices into this version!
You want to pre-cook the Fingerlings in the microwave before frying to ensure they cook through. Steaming and boiling works, too! My dad would always have some pre-cut potatoes sitting in the fridge for us so we could cook them up whenever! Potatoes were a part of every meal of the day for us!
Plus, I HATE wasting any food. Since we are talking about Father's Day, it is only fitting that I share my dad's secret to amazing home fries. BACON FAT! I did not throw in any bacon strips this go around. So next time you fry up bacon for whatever reason, make sure to save the fat for these breakfast home fries!

Breakfast Home Fries (using Fingerling Potatoes!)
These breakfast home fries are perfect any day of the year, including Christmas morning! Can have the potatoes pre-cooked in advance and warmed before serving!
Ingredients
- 1.5 lbs Little Potato Company Fingerling Potatoes, halved lengthwise
- 8 oz button mushrooms, sliced
- ½ red bell pepper, chopped small
- 2 tbsp. bacon grease + more if necessary
- Salt and pepper
- 1 tsp. paprika
- ½ tsp. garlic powder
- ½ tsp. dried oregano
- Dried parsley for garnish
Instructions
- Place potatoes into a microwave-safe dish and heat for 5 minutes, or until fork tender.
- In a large cast iron pan, heat 1 tbsp. bacon grease over medium-high heat. Once hot, add mushrooms and cook for three minutes. Add potatoes.
- Cook for 5 minutes, stirring frequently. Add other tbsp. of bacon grease along with salt, pepper, paprika, garlic powder, and dried oregano. Continue cooking for another 10-15 minutes, or until potatoes are golden brown to your liking! If needed, add more bacon grease as you toss the potatoes (need to be tossed more often near the end to prevent burning.) In the last few minutes of cooking, stir in red peppers.
- Garnish with dried parsley if desired!
Notes
Pre-cooking the potatoes ensures they cook evenly (without the outside becoming overcooked before the inside is cooked!)

I like this recipe. I have tried making home fries at home before but used regular baking potatoes and we just did not like them. Maybe the fingerling would be so much better.
