I’ve posted mini pizza recipes here on the blog before. They were a big deal in my childhood, and still to this day we love them! A great way to utilize leftover spaghetti sauce for one, but they truly are super easy to make.
When I was approached by Mrs. Renfro’s to create a recipe, I wasn’t sure where I wanted to go. Besides salsas, they offer relishes, pickled peppers, cheese sauces, and barbecue sauces! My husband is a HUGE salsa lover, so my choices were obviously geared towards him 🙂 And I think the selections we made were perfect! Today’s salsa chicken mini pizzas used both the Tequila Salsa and the Chipotle Corn Salsa (both fitting for Mexican cuisine!)
Now, I am all about homemade sauces, especially pizza sauce however, sometimes a quick dinner is in order, and these salsa chicken mini pizzas relinquish me of any sauce making. I have this tendency to cook my sauces for hours on end to really get the flavours going (more concentrated, more flavourful!) With this pizza twist, we were able to cut prep time down drastically, all the while being rewarded with a mostly homemade meal.
Of course, like many of my recipes, the meal is totally easy to customize. I threw some fresh baby spinach on the hot pizzas for added veggie goodness, but you can add whatever you like! Mushrooms would be fantastic, and perhaps a side of guacamole to pair with that classic salsa. As for the salsas? Well, it was super hard to choose just one to work with so that’s why I went with two 🙂 However, I am already excited to make a veggie version for myself using their ghost pepper varietal!
Oh!!! Lastly, this recipe is a great way to use up leftover chicken. I have the instructions for chicken drumsticks listed in the recipe below just in case you don’t have some leftovers hanging around.
Yields 48 mini pizzas
A great recipe to use up leftover chicken! My 3 lbs raw chicken yielded about 2 lbs cooked chicken.
Ingredients
- 3 lbs bone-in, skin-on chicken drumsticks, pat completely dry OR 2 lbs cooked chicken, shredded
- Salt and pepper
- 24 English muffins, halved
- 1 (35 g) package taco seasoning (homemade is great, too!)
- 1 red onion, diced
- 2 tsp. olive oil
- 1 (19 fl oz) can black beans, drained
- 1 jar of Mrs. Renfro's Salsa (I used their Tequila Salsa and Chipotle Corn Salsa .)
- 2 cups shredded mozzarella cheese
Instructions
- Preheat oven to 425F. Line a baking sheet with aluminum foil. Place wire rack on top of foil. Layer chicken on top: season with salt and pepper.
- Bake for 35 minutes, or until internal temperature reaches 160F. Broil chicken for a crispier skin! Allow to cook and then remove chicken meat from bones.
- Add oil to a large frying pan over medium-high heat. Stir in onion and cook for a few minute, or until translucent. Add shredded chicken. Pour in 2/3 cup water and taco seasoning. Bring to a boil, reduce heat, and simmer until thickened, about 3-5 minutes.
- Preheat oven to 350F. Line English muffins on two baking sheets. Add 1-2 tbsp. of salsa per pizza. Follow with chicken, beans, and cheese.
- Place into oven and bake for 15 minutes, or until cheese has melted. Garnish with fresh spinach if desired.
Notes
Follow the directions on your taco seasoning accordingly (mine needed 2/3 cup water, but other brands can vary.) For a crunchier pizza, feel free to toast the English muffins prior to baking.
Homemade is big for us, but sometimes the season doesn’t provide us with quality produce to make our favourite foods. More often than not I am using canned tomatoes to make my spaghetti and pizzas sauces (nothing wrong with that!) I wanted something super easy for my readers, and these salsa chicken mini pizzas fit the bill! Plus, Mrs. Renfro’s salsas are really, really good. I mean, the quality is there, the flavour is there, and the range of products they offer are unbelievable. You can enjoy sweet, savoury, and spicy!
My next recipe will fully utilize their raspberry chipotle salsa (if I can ever manage to actually not devour the jar in one sitting!)
