Cool temperatures are finally settling in (and hopefully here to stay!) so let’s warm up with this fiesta salsa chicken in the slow cooker! Delicious, moist, and made with bone-in chicken that can easily be shredded or served whole.
Once again I will have to thank my sister for a recipe. She had been talking about a ranch and salsa chicken and we finally motivated ourselves to make this fiesta salsa chicken in the slow cooker!
Originally the plan was to use boneless, skinless chicken, but I guess I got my sales mixed up because when my sister went to pick up the chicken, it was all skinless, bone-in. No fret because we actually prefer that cut, but I was worried our idea would not work out since there were those pesky bones. However, they were super easy to de-bone after cooking. I mean, REALLY easy. Don’t even think about using utensils as your hands will be the best tool for the job.
Now, you could leave the chicken whole when you serve it. And it sure looks pretty! But what would fiesta salsa chicken in the slow cooker be without some pizzazz?! Shredding the chicken gives you so much more play. You can use the meat for wraps, salads, tacos, you name it. And since we kept the bones in, you definitely have more flavour going on. As always, I mention that my slow cooker has a thermometer probe so my chicken is cooked to exactly 160F. You can cook this meal on high for about 3 hours, or low for 6-8 hours.
Oh! Almost forgot. We totally meant to add diced sweet peppers to this meal. We had them all prepped and everything, too. But you know what? Perfect without them! Mind you, the peppers would add to the whole fiesta aspect 🙂 While this fiesta salsa in the slow cooker is great for a midweek dinner, it is also great to have on hand if you want some leftovers kicking around (because leftover chicken makes for great healthy lunches!)

- 2 1/2 lbs bone-in, skinless chicken breasts (boneless would work, too!)
- 3 tsp. powdered ranch seasoning
- 1/2 cup + 1 cup salsa
- Salt and pepper
- 1/2 cup finely chopped assorted peppers (optional)
- Place 1/2 cup of salsa in the bottom of your 6-quart slow cooker. Place chicken on top and season with salt, pepper, and ranch seasoning. Cover with remaining salsa.
- Cook on high for 2-3 hours, or until chicken reaches 160F internally (6-8 hours on low.)
- Serve chicken as is, OR, take chicken off bone and shred. Perfect for wraps, salads, etc!
You can use boneless, skinless chicken breasts but make sure to change the cook time accordingly. Taking the meat off the bone is SUPER easy and it adds more flavour! I threw in whole basil leaves for added flavour.
