Canadians know all about Diana Marinades and Sauces (soooo delicious!) This garlic and herbs slow cooker chicken with rice is a great mid-week dinner and utilizes bottled ingredients!
With the past hectic week I thought it would be appropriate to post some easy recipes. Yesterday’s general tso’s potatoes and chicken showed that you don’t need to go homemade all the time when it comes to sauce (though, I must say, I love homemade general tso’s sauce!) Today’s Diana Marinade Garlic and Herbs slow cooker chicken with rice uses a famous Canadian bottled sauce, and really makes an awesome dish! It takes me back to my childhood when I would make a very similar dish for my family (and a meat dish I would actually eat!) (No affiliation, just a product I love!)
With back to school drawing near, I am trying really hard to stay focused and get things done. Garlic and herbs slow cooker chicken with rice is not only delicious, but fast and EASY! Slow cookers are a big deal during the summer, but even more so with school back in. Weeknights just get too hectic. Instead of resulting to take out you can make a nice homemade meal with little effort. Oh!! The rice is cooked right in the slow cooker so you don’t even have to worry about a side dish! My husband said he wished there was more rice, so you can always double that (but he is a rice fiend so I don’t know how much to trust him.)
“Kacey, I cannot believe you are using boneless, skinless chicken breasts here when you swear by every other cut of chicken!” I get it!! And I really would have used bone-in chicken but surprisingly boneless, skinless chicken breasts were on sale and I was thinking about the kids! Children just have a good relationship with boneless, skinless chicken breasts so I did not want to mess with that. That being said, any cut of chicken would work here, but obviously cook time would differ. Once again, I recommend my slow cooker with the built in thermometer probe (this Hamilton Beach 6-Quart Slow Cooker goes on sale a lot so I have bought one for everyone in my family! Again, no affiliation!) Does all the cooking for me without the worries of overcooking 🙂
And there we have it! This garlic and herbs slow cooker chicken with rice is easily customized to your liking. I only added carrots, but onions, mushrooms, pepper, you name it, they will work! I was a little worried that the mixture would be too liquidity so I avoided peppers and onions, but you can always cook those ingredients quickly in a pan before adding them to help eliminate the moisture.
Diana Marinades really help with a fast, but delicious, meal!

- 2 1/2 lbs boneless, skinless chicken breasts
- 1 (375 mL) bottle Diana Marinade, Garlic and Herbs flavour
- 2 small carrots, finely chopped
- 2 cups instant rice
- 1 1/4 cups chicken broth
- Salt and pepper
- Place rice, broth, and some of the marinade into a 6-quart slow cooker. Toss to combine. Place chicken on top and arrange carrots around chicken. Season with salt and pepper. Pour on remaining marinade.
- Cover and cook on low for 4-5 hours, or until chicken reaches 160F internally (my slow cooker has a probe so it cooks to this exact temperature.)
- Serve over the rice and season with additional oregano if desired!
I am soooooo excited to share my new doors and windows with you (check out photos on Instagram!) There were no real “before” pictures, but looking back, I am sure I took some of the house here and there when we began some of the major renovations. For sure in my kitchen! I cannot even choose which of the new windows/doors is my favourite because I love them all! Sitting in no AC was well worth it in the end (though I am still jealous my daughter and husband had the opportunity to swim all week.)

Song: Rapture by Hurt. I recently began violin lessons and while I have always wanted to play the violin, I must admit this band is one of my biggest influences as of late. A singer who is a song writer, and a musician of many talents: count me in!
TV Show: North & South. I feel this is more of a miniseries, but I LOVE it! Thank you, Netflix! I swear I have watched this a dozen times and I know I would never have found it otherwise (though, I am a huge romantic so who knows how true this statement is!)
Movie: Constantine. Dating all the way back to high school, when I saw the previews for this movie I COULD NOT WAIT. Was not disappointed. I even warned my friend and sister who went with me that they were not to ask a single question while the movie played. Still one of my favourites to this day and reminds me that I should totally break out my copy!
Book: Harry Potter Series by JK Rowling. Perfect timing with the latest release. I feel I do not even need to explain myself. My almost-5-year old is showing interest so I think it is time to reread the whole series!
Video Game: Craft the World. Stardew Valley has been on my mind constantly, but while the guys worked on the windows and doors, I wanted something more at ease (aka, a game I could alt f4 out of without the concern of lost content.) Dwarfs, shelter building, fending off enemies?! Oh, and all those Steam achievements!
